Chicken Rice

Fast food have been ever popular nowadays and Chicken Rice is widely known in Singo-Chinese cuisine and it is very famous dish in Singapore.

Serves (4 to 5)

Ingredients (A)

600 ml

 

Ingredients (B)

2 tablespoons

1 teaspoon

1 teaspoon

1 teaspoon

1 teaspoon

2 teaspoon

2 sprigs

2 tablespoons

(If necessary)

 

Ingredients (C)

500 grams

 

Ingredients (D)

3 tablespoons

 

Water

 

 

Chicken Powder

Sugar

Monosodium Glutamate (If necessary)

Shallot (paste)

Ginger (paste)

Garlic (paste)

Pandan Leaves

Butter

Salt

 

 

Thai Rice

 

 

Sesame Oil

 

 

1. Put the rice into a large bowl and wash it under running water for few time; then soak it in water for about 20 minutes, then strain it.

2. Boil the Ingredients (A & B) for 5 minutes in a pot, then add in the Ingredient (C).

3. Once the rice is added, stir it occasionally till water level decreases till the top of the rice, then stir it and cover the pot; cook it in a low flame for 5 minutes.

4. After the 5 minutes, stir it. And cover the pot properly and cook it in a low flame till cooked.

5. Finish it off, with Ingredient (D), then stir it well; cover the pot and leave it for a minute or so.

6. Serves it with Steamed Chicken or  Roasted Chicken.

Chicken Rice Chilli Sauce

 

Ingredients (A)

5 pieces

10 pieces

2 pieces

½ teaspoon

 

Ingredients (B)

4 pieces

½ teaspoon

As necessary

1 teaspoon

1tablespoon

 

Red Chilli

Red Chilli Padi

Garlic (peeled)

Young Ginger

 

 

Small Lime Juices

Monosodium Glutamate (If necessary)

Salt

Sugar

Sesame Oil

 

 

1. Cut the Ingredients (A) into pieces and blend it with some ice water.

2. Then strain it into a bowl to separate the water from the blended chilli. Do not dispose the strained water. Then put the blended chilli into a different bowl.

3. Add Ingredients (B) into the bowl that contains the blended chilli and mix it till the salt and sugar dissolves.

4. Add in the strained water in, according to preferred thickness and salt if it is necessary.

 

* If preferred add in extra Lime Juices, according to your own preference.
