Roasted Chicken

A very mouth watering dish that is roasted to perfection with Chinese spices.

Serves (4 to 5)

 

Ingredients (A)

1 small piece

 

Ingredients (B)

1 teaspoon 

1 teaspoon 

1 teaspoon 

½ teaspoon 

 

Ingredients (C)

1 tablespoon

2 tablespoons

As necessary

 

 

 

Fresh Chicken

 

 

5 Spice Powder

Ginger (paste)

Garlic (paste)

Chicken Powder

 

 

Honey

Rice Vinegar

Salt

 

 

1. Rinse the Ingredients (A) inside and out, then dry it well, especially inside.

2. Rub Ingredient (B) into the interior of the chicken.

3. Tie/fasten and close the cavity and the opening with a string.

4. Rinse the exterior of the chicken using boiling water evenly for 3 to 4 times.

5. Mix Ingredient (C) into a large bowl. And coat the evenly onto the exterior of the chicken.

6 Then attach a handle to the chicken and hang it in a cool breezy place or near a fan for 3 to 4 hours.

7. Preheat the oven to 180oC and roast it for 20 to 30 minutes until a desirable dark brown is observed.

8. Cut and serve with chicken soya sauce. (Refer to recipe below)

 

* Boiling water is used to rinse, so as to allow the coating to stick on it and also to separate the skin from the flesh later when it is baked.

* Place a tray under the chicken when hanging so as to catch the drippings.

 

 

Soya Sauce for Chicken

 

Serves (4 to 5)

 

2 tablespoons

3 tablespoons

¼ teaspoon

½ teaspoon

1 tablespoon

 

 

Soya Sauce

Warm Water

Monosodium Glutamate (If necessary)

Sugar

Sesame Oil

 

 

 1. Add the Ingredients into a bowl and mix till the sugar dissolves.

 

*If you think the Soya Sauce for Chicken is to salty add in warm water according to your own preference.
