South Indian Vegetable Curry |

Serves (4 to 5) As necessary Cooking
Oil Ingredients (A) ½ teaspoon
Cumin Seed ½ teaspoon
Fennel Seed ¼ teaspoon
Fenugreek Seed Ingredients (B) 2 sprigs
Curry Leaves 1 piece
Green Chilli (sliced) 5 pieces
Whole Garlic (peeled)
50 grams
Onion (sliced) 80 grams
Tomatoes (chopped) Ingredients (C) 7 tablespoons
Fish Curry Powder 1 teaspoon Chilli
Powder 2
sprigs Pandan/
Screw Pine Leaves
1 cup
Water (mix with the powders above) Ingredients (D)
20 grams
2nd Brinjal 20 grams
3rd Long Beans 30 grams
4th Cauliflower 15 grams
5th Sweet Beans Ingredients (E) 1 tablespoon Tomato
Sauce As necessary Tamarind Paste As necessary Coconut Milk or Evaporation Milk 1 teaspoon
Sugar Ingredients (F) 2 pieces
Tomatoes (cut 4) 2 sprigs
Coriander Leaves 2 pieces
Green Chillies (sliced) 1. Wash and cut the Ingredients (D), and drain it and leave it aside. 2. Soak the tamarind from Ingredients (E) in 1 cup of water and take out the seeds
and leave it aside. 3. Heat the oil in a cooking pot. 4. Then add in Ingredients (A), after few seconds then add in the Ingredients (B), and fry it till golden brown. 5. Add in the Ingredients (C), and then reduce the flame and
fry it till fragrant and oily. 6. Once the masala is done. 7. Then add in the Ingredients (D), in order as shown. Increase the flame
if its necessary. 8. Start with Potatoes,
after 8 minutes add Carrot and Brinjal, then after 3 minutes add in the rest of the vegetables except sweet beans,
add it a minute later; cook it till well. 9. After adding the vegetables immediately add in the Ingredients (E), and
simmer it well. 10. Once it is done, finish it off with Ingredients (F), and simmer it well. 11. Add in salt if its necessary. * Fish
curry powder is a mixture of spices only. It is called fish curry powder because it is mostly used in fish and seafood dishes.
But it contains no trace of seafood. Please Click
