Coconut Rice Indian Style |

Serves
(4 to 5) Ingredients (A) 350 ml Thick
Coconut Milk 250 ml
Water 3 tablespoons Butter 1 teaspoon
Ginger (paste) 1 teaspoon
Garlic (paste) 1 tablespoon
Sugar As necessary
Salt 5 sprigs
Pandan / Screw pine Leaves (tie them)
500 grams
Long Grain Rice Ingredients (B) 3 tablespoons
Cooking Oil or Coconut
Oil 4 pieces
Dried Chili (cut into 4) ¼ teaspoon
Mustard Seed 3

Curry Leaves 1.
Put the rice into a large bowl and wash it under running water
for few time; then soak it in water for about 20 minutes, then strain it
and leave it aside. 2. Cook all the Ingredients
(A) in a pot; stir it occasionally till the water level
decreases till the top of the rice, then stir it and
cover the pot; cook it in a low flame for 5 minutes. 3. After the 5 minutes,
stir it. And cover the pot properly and
cook it in a low flame till cooked. 5. Heat the oil in another cooking pot and fry Ingredients
(B). 6. Then add in the cooked coconut rice and stir it occasionally
