Tomato Rice

A very refreshing dish, which provides the delicious taste and goodness of fresh juicy tomatoes.

Serves (4 to 5)

 

Ingredients (A)

3 tablespoons            Tomato Paste

5 tablespoons            Butter

50 ml                          Thick Coconut Milk

1 tablespoon              Chilli Powder

1 tablespoon              Sugar

As necessary             Salt

5 sprigs                      Pandan Leaves/Screw Pine Leaves (tie them)

550ml of  Water for 500 grams of rice when it is added.

 

Ingredients (B)

500 grams                  Long Grain Rice

 

Ingredients (C)

80 grams                     Tomatoes (diced)

 

 

1. Put the rice into a large bowl and wash it under running water for few time; then soak it in water for about 20 minutes, then strain it.

2. Boil the Ingredients (A) for 5 minutes in a pot, then add in the Ingredient (B).

3. Once the rice is added, stir it occasionally till water level decreases till the top of the rice, then stir it and cover the pot; cook it in a low flame for 5 minutes.

4. After the 5 minutes, stir it. And cover the pot properly and cook it in a low flame till cooked.

5. Finish it off, with Ingredient (C), then stir it well; cover the pot and leave it for a minute or so.
