Chicken with Dry Chilli

Chicken is widely used around the world, but how about with spicy dry chilli.

Serve 4 to 5

 

As necessary               Cooking Oil

 

500 grams                    Fresh Chicken (boneless)

 

Ingredients (A)

1 tablespoon                 Ginger (paste)

2 tablespoons               Garlic (paste)

1 tablespoon                 Chicken Powder

 

Ingredients (B)

2 pieces                         Dry Chilli (cut into 4)

 

Ingredients (C)

1 piece                           Cinnamon Stick

3 pieces                         Cardamom Seed

1 piece                           Star Anis

3 pieces                         Cloves

 

Ingredients (D)

½ teaspoon                    Fennel Seed

2 sprigs                          Curry Leaves

 

Ingredients (E)

50 grams                        Shallot (finely sliced)

 

Ingredients (F)

3 sprigs                          Pandan / Screw pine Leaves

2 pieces                          Lemon Grass

 

Ingredients (G)

3 tablespoons                Meat Curry Powder

1 tablespoon                  Chilli Powder

As necessary                 Water (mix with the curry powder above)

80 grams                        Tomatoes (finely chopped)

 

Ingredients (H)

1 tablespoon                  Tomato Sauce

3 tablespoons                Coconut Milk

As necessary                 Salt

 

 

1. Cut the chicken into pieces, with skin or without skin.
2. Marinate the chicken with Ingredients (A), and leave it aside for 10 minutes or so.

3. Heat the oil in a cooking pot.

4. Add in the Ingredients (B), and fry it till, it darkens and leave it aside.

5. Add in the Ingredients (C), and fry it till fragrant.

6. Then add in Ingredients (D), after few seconds then add in the Ingredients (E), and fry it till golden brown.

7. Then add in the Ingredients (F & G), then reduce the flame and fry it till fragrant and oily.

8. Then add in the marinated chicken, and increase the flame and cook it till, it is ¾ cooked.

9. Add in little water and salt if its necessary.

10. Finish it off, with Ingredients (H), and stir it until it becomes dry.
