Squid Masala

Natural flavour of squid with the spicy and aromatic flavour of the masala.

Serves (4 to 5)

Ingredients (A)

Ingredients (B)

¼ teaspoon

2 sprigs

 

Ingredients (C)

80 grams

 

Ingredients (D)

1 teaspoon

2 teaspoons

 

Ingredients (E)

1 tablespoon

3 tablespoons

As necessary

 

Ingredients (F)

100 grams

400 grams

½ teaspoon

As necessary

 

Ingredients (G)

4 sprigs

 

 

Cooking Oil

 

 

Cardamom

Cinnamon

Cloves

Star Anis

 

 

Fennel Seed

Curry Leaves

 

 

Onion (finely sliced)

 

 

Ginger (paste)

Garlic (paste)

 

 

Chilli Powder

Meat Curry Powder

Water (mix with the powders above)

 

 

Tomatoes (chopped)

Squid (sotong)

Chicken Powder

Salt

 

 

Spring Onion

 

 

1. Clean and cut the Squid and soak it with salt for 5 minutes. Then wash it to remove the salt and fishy smell.    

2. Heat the oil in a cooking wok.

3. Then fry the Ingredients (A) till fragrant.

4. Add in the Ingredients (B) and fry it for few seconds, then immediately add in Ingredients (C) and fry it till golden brown

5. Then add in the Ingredients (D) and fry it till fragrant.

6. Add in the Ingredients (E), then reduce the flame and fry it till fragrant and oily.

7. Once the masala is done.

8. Add in the Ingredients (F), stir it well till it becomes dry, at least for 15 to 25 minutes.

9. Increase the flame if it is necessary. Add in salt if its necessary.

10. Finish it off with Ingredients (G) and simmer it well.
