Vegetable Bhajee

A delicious dryish mild vegetable curry.

Serves (4 to 5)

 

As necessary                    Ghee

 

Ingredients (A)

½ teaspoon                       Cumin Seed

½ teaspoon                       Black Onion Seed

2 pieces                             Bay Leaves

 

Ingredients (B)

40 grams                           Onion (Chopped)

2 pieces                             Garlic (Chopped)

 

Ingredients (C)

1 tablespoon                     Fish Curry Powder

½ teaspoon                       Turmeric Powder

 As necessary                   Water (mix with the powders above)

 

Ingredients (D)

½ cup                                 Plain Yoghurt

½ cup                                 Thick Coconut Milk

As necessary                     Water

As necessary                     Salt

 

Ingredients (E)

60 grams                           1st Carrot

40 grams                           2nd Long Beans

40 grams                           3rd Cauliflower

30 grams                           4th Sweet Beans

 

 

1. Wash and cut the Ingredients (E), then boil the Ingredients (E) with salt one by one in order as shown in the ingredient list. And drain it and leave it aside.

2. Heat the ghee in a cooking pot.

3. Then add in Ingredients (A), after few seconds then add in the Ingredients (B), and fry it.

4. Add in the Ingredients (C), and then reduce the flame and fry it till fragrant and oily.

5. Add in the Ingredients (D & E), and stir it well till thick. Increase the flame if it’s necessary.

6. Add in salt if it’s necessary.

 

* Fish curry powder is a mixture of spices only. It is called fish curry powder because it is mostly used in fish and seafood dishes. But it contains no trace of seafood.
