Coconut Rice Indian Style

Coconut rice is famous in Kerala, and since coconut is used widely in South Indian cuisine as a flavour-adding ingredient, there is no question that this dish will be tasty.

Serves (4 to 5)

 

Ingredients (A)

350 ml                          Thick Coconut Milk

250 ml                          Water

3 tablespoons              Butter

1 teaspoon                   Ginger (paste)

1 teaspoon                   Garlic (paste)

1 tablespoon                Sugar

As necessary               Salt

5 sprigs                        Pandan / Screw pine Leaves (tie them)

500 grams                    Long Grain Rice

  

Ingredients (B)

3 tablespoons               Cooking Oil or

                                      Coconut Oil

4 pieces                        Dried Chili (cut into 4)

¼ teaspoon                   Mustard Seed

3 sprigs                         Curry Leaves

 

 

1. Put the rice into a large bowl and wash it under running water for few time; then soak it in water for about 20 minutes, then strain it and leave it aside.

2. Cook all the Ingredients (A) in a pot; stir it occasionally till the water level decreases till the top of the rice, then stir it and cover the pot; cook it in a low flame for 5 minutes.

3. After the 5 minutes, stir it. And cover the pot properly and cook it in a low flame till cooked.

4. When it is done, leave it aside.

5. Heat the oil in another cooking pot and fry Ingredients (B).

6. Then add in the cooked coconut rice and stir it occasionally until it is mixed well or vice versa.
