Brinjal Masala With Garlic

This dish is deeply enhanced with garlic, especially for garlic lovers.

Serves (4 to 5)

 

As necessary                        Cooking Oil

 

Ingredients (A)

350 grams                             Brinjal

 

Ingredients (B)

¼ teaspoon                           Fenugreek Seed

½ teaspoon                           Fennel Seed

¼ teaspoon                           Cumin Seed       

2 sprigs                                 Curry Leaves

 

Ingredients (C)

10 pieces                             Garlic Whole (peeled)

1 piece                                 Green Chilli (sliced)

30 grams                              Onion (finely sliced)

 

Ingredients (D)

1 tablespoon                        Chilli Powder 

2 tablespoons                      Fish Curry Powder

A little                                 Water (mix with the powders above)

 

Ingredients (E)

As necessary                      Salt

1 tablespoon                       Tomatoes Sauce

30 grams                             Tamarind Paste

As necessary                      Sugar

 

Ingredients (F)

2 pieces                               Tomatoes (cut into 4)

 

 

1. Heat the oil in a cooking wok.

2. Cut and fry the Ingredients (A) till ½ cooked with salt, in little oil and strain it and leave it aside.

3. Then add in Ingredients (B), after few seconds then add in the Ingredients (C), and fry it till golden brown.

4. Add in the Ingredients (D), reduce the flame and fry it till fragrant and oily.

5. Once the masala is done then add in the Ingredients (A & E), into the wok, increase the flame; stir well.

6. Add in salt if its necessary.

7. Finish it off, with Ingredients (F), and simmer it.

 

* Fish curry powder is a mixture of spices only. It is called fish curry powder because it is mostly used in fish and seafood dishes. But it contains no trace of seafood.
